Tradition and Sustainability in Don Carlos's Milpa

For four years, Don Carlos and his family have opened the doors of their home and their cornfield to us, a space where agricultural tradition intertwines with everyday life. Located in a rural setting, they have cultivated not only a variety of products but also a relationship of trust and respect with those who visit their home.

In his milpa, Don Carlos grows native corn, a treasure of Mexican agriculture that is not only essential to the local diet but also represents an invaluable cultural heritage. Along with corn, he grows squash, jicama, peanuts, and hibiscus flowers, all products that reflect the rich biodiversity of the Yucatán region. Each of these crops not only brings flavor and nutrients to the table but also contributes to the sustainability of the local ecosystem.

In addition to farming, Don Carlos's family also raises livestock and beekeeping. Raising animals not only provides them with fresh food but also allows them to maintain a production cycle that respects animal welfare and the environment.  

On the other hand, beekeeping is an activity that not only provides them with high-quality honey, but also plays a crucial role in pollinating their crops, thus ensuring a more abundant and healthy production.

Don Carlos and his family's products aren't just ingredients; they're the heart of many of the dishes served at Pancho Maíz. Each bite tells a story of dedication, hard work, and love for the land.  

The experience of visiting Don Carlos and his family is a reminder of the importance of supporting local agriculture and valuing products that come from sustainable practices.
