We have created a place where the milpa and the table come together, paying homage to Mexico’s rich culinary heritage

Our History

At Pancho Maíz, we strive to preserve and share the richness of the ingredients from the Yucatán Peninsula.

And that’s how this project began—by reclaiming heirloom corn, a cornerstone of our identity that has gradually been pushed aside.

But our story didn’t stop there. Over time, we incorporated more products from the Yucatecan countryside: beans of different varieties, sesame, peanuts, sweet potatoes, epazote, squash, and other ingredients that are part of our culinary heritage.

Our Philosophy

Corn is much more than food; it is the cornerstone of our culture.​

At Pancho Maíz, we believe our traditions are born at the table. Every dish we serve is a bridge between the past and the present, a way to tell the story of Mexico through flavor.

Our Commitment  

One of our greatest prides is working hand in hand with local producers.

Our mission is to highlight the identity of our products. That’s why it’s impossible to focus on just one product to provide the food security our customers deserve. For this reason, we prioritize the preservation of polycultures and avoid monocultures, promoting sustainable and responsible agriculture.

Thanks to them and for them, this project continues, to provide food security for the region.


While we don’t specialize in Yucatecan cuisine, we are committed to the conservation and promotion of products from the Yucatán Peninsula.
